Cheese Biscuits

Ingredients

Biscuits

1oz. flour

4oz. grated cheese

2oz. of buttery yolks of two eggs

A little salt 

Cayenne pepper

Filling

Pounded Anchovies

1 scrambled egg

Finely chopped parsley

Salt & pepper

Instructions

Biscuits

Rub the butter and flour together, add the grated cheese, salt and cayenne. Beat the two yolks of eggs, add to the dry ingredients and make into a paste, if too stiff add a little water, so as to roll nicely. Roll very thin, cut into round biscuits, bake a nice pale brown.

Filling

Have ready some of this mixture: some pounded anchovies blended with a small quantity of scrambled eggs and season with cayenne, salt, and finely chopped parsley. Make sandwiches of the biscuits with this mixture and serve very hot.
