Chocolate Walnut Cream Sandwich

Ingredients

6 oz. flour

4 oz. sugar

2 oz. butter

3 heaped teaspoons of cocoa

1 large teaspoonful of baking soda

1 egg

1 gill milk

Whipped cream

Chocolate icing

A few shelled walnuts

Instructions

Cream the butter and sugar, add the egg, which has been well beaten. Mix together the baking powder, cocoa and gradually sift in the flour. Lastly, add the milk, butter and sugar, and beat to a cream. Grease 2 sandwich tins and put half Into each, spreading smoothly with a fiat knife. Bake for 20 minutes in a moderate oven. When cool, spread with whipped cream and sandwich together. Cover with chocolate Icing and place the walnuts on top.

Mrs Owen Gibbs was Miss Emily Campbell who was born in  Bungaree, Victoria in 1873 . She married John Owen Gibb in 1902 and had three children: Linda, Iris and John. (reference). This may be the same Emily Campbell who was appointed head teacher at Wedgecarrup school in 1900 (reference).
