Velvet Cake

Ingredients

Cake

6 egg yolks

3 egg whites

2 cups of sugar

2 ½ cups of flour

1 tablespoonful baking powder

1 tablespoonful lemon extract

1 cup of boiling water

Icing

3 egg whites

18 tablespoonfuls icing sugar

1 tablespoonful of lemon extract

Instructions

Cake

Beat the yolks of six eggs a little, add two cups of sugar; and beat 15 minutes, add the well-beaten whites of three eggs (leaving the other three for icing) then one cup of boiling water, two and a half cups of flour with one tablespoonful of baking powder mixed dry; flavor with one tablespoonful of lemon extract. Make in three layers, with icing between and on top. 

Icing

Add to the well-beaten whites of three eggs, 18 tablespoonfuls of icing sugar and one tablespoonful of lemon extract. Mix well and allow to dry in a cool place.
